The Silestone Institute brought\ntogether chef Jos\u00e9 Andr\u00e9s, architect Juli Capella and Santiago Alfonso, vice\npresident of Strategic Communication and Corporate Reputation at Cosentino to\ndiscuss the concept and creation of Mercado Little Spain, the gastronomic space\ndedicated to Spanish cuisine in the heart of Manhattan. The session was\nmoderated by Julia P\u00e9rez Lozano, food journalist and founder of Gastroactitud.com.<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><em>Mercado\nLittle Spain<\/em> is a way of\nshowing that Spain can be taken to every corner of the world&#8221; according to\nJos\u00e9 Andr\u00e9s. <\/li><li>It is\nan invention of an unprecedented gastronomic typology that did not exist\nbefore. It is not a restaurant, nor a bar or a market. In addition to the food,\nall the furniture, countertops, coatings, and flooring are 100% Spanish&#8221;,\nexplains Juli Capella. <\/li><li>&#8220;For\nCosentino, <em>Mercado Little Spain<\/em> is one of the best catalogs we can\nshowcase worldwide&#8221; according to Santiago Alfonso.<\/li><\/ul>\n\n\n\n<p><strong>A piece of Spain to project to the world<\/strong><\/p>\n\n\n\n<p>With the creation of <em>Mercado Little Spain<\/em>, the\nidea was to bring Spain to New York in different ways. Beyond the products, wines\nand cheeses, in a way, everything you see and touch is Spanish, both the\ngastronomic and the furniture and design.<\/p>\n\n\n\n<p>Jos\u00e9 Andr\u00e9s&#8217; intention with this space was not to make\na restaurant but to tell the story of his country. To do so, it was necessary\nto have this great place in the great city of New York, which is still the\nAmerican capital par excellence. Together with Jos\u00e9 Andr\u00e9s, the brothers Ferr\u00e1n\nand Albert Adri\u00e0, great friends of the chef, are the soul of Mercado. <\/p>\n\n\n\n<p>Juli Capella has been responsible for the interior design, taking care of all the details of the design and decoration so that everything is 100% Spanish. Cosentino has been very present throughout the space dressing the countertops, bars, and coatings with Dekton and Silestone surfaces. <\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/silestoneinstitute.com\/wp-content\/uploads\/2024\/05\/2.png\" alt=\"\" class=\"wp-image-5880\"\/><\/figure>\n\n\n\n<p>Jos\u00e9 Andr\u00e9s hopes that Mercado will be a place that\nopens the opportunity not only for many Americans to get to know Spain but also\nfor other chefs to open Spanish restaurants around the world. A way to see that\nSpain believes in itself and can be taken to every corner of the world by the\nhand of small and large entrepreneurs, not only in the food industry but also\nin other types of Spanish industries. As an example, he says: &#8220;Gazpacho -a\nsalad turned into soup- is one of our best inventions with which creativity is\nshared and known in many parts of the world. Let us start working so that\ngazpacho becomes the next Coca-Cola&#8221;. <\/p>\n\n\n\n<p>The chef explained, &#8220;Mercado is a project that we\nwill see in other parts of the world. It is going to be an impressive concept\nand we already have 2 or 3 places in America and in other parts of the world of\npossible Mercados&#8221;.<\/p>\n\n\n\n<p>Jos\u00e9 Andr\u00e9s hopes that we all come out of this pandemic stronger and where gastronomy, dish by dish, history by history, design by design&#8230; is what begins to give us hope that the world can be much better, one tapa at a time, one plate of food at a time. <\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/silestoneinstitute.com\/wp-content\/uploads\/2024\/05\/Sin-titulo3.png\" alt=\"\" class=\"wp-image-5882\"\/><\/figure>\n\n\n\n<p><strong>A unique space for creativity and design<br>\n<\/strong>To carry out the\nproject, different professionals and products were brought in from Spain:\narchitects, designers, tableware, cutlery, surfaces such as Dekton and\nSilestone for countertops, bars, and coatings, among others.<\/p>\n\n\n\n<p>Juli Capella believes that &#8220;New Yorkers and\nAmericans are surprised that in Spain we are so expressive, so daring, so\navant-garde&#8230; Let us not forget that Spain has certainly led an\navant-garde&#8221;. <\/p>\n\n\n\n<p>On a creative level, it was key for Juli to understand\nwhat atmosphere Jos\u00e9 Andr\u00e9s was looking for in Mercado. On a technical point,\nthe project was not without its difficulties in adapting the space to the needs\nof Spanish cuisine and the 14 different &#8220;chiringuitos&#8221;. As an\nexample, Juli Capella explained that to make the paellas they were forced to\nmake a chimney different from all the others because it was not possible to mix\nthe smoke from the coal combustion with the smoke from the gas combustion.\nOther aspects with which they faced were the delimitation of the spaces be\nbetween one place and another or the capacity of people.<\/p>\n\n\n\n<p>According to Juli Capella, &#8220;Mercado is not something that existed until now, it is not a restaurant, it is not a bar, it is not a market. I think that the charm of this typological invention of Jos\u00e9 is the element of being an invention of an unprecedented gastronomic typology&#8221;.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/silestoneinstitute.com\/wp-content\/uploads\/2024\/05\/cosen.png\" alt=\"\" class=\"wp-image-5884\"\/><\/figure>\n\n\n\n<p><strong>State-of-the-art materials: must-haves for a\nrestaurant<\/strong><\/p>\n\n\n\n<p>Santiago Alfonso, vice president of Strategic Communication\nand Corporate Reputation of Cosentino and general secretary of the Silestone\nInstitute, commented that for Cosentino Mercado Little Spain is one of the best\ncatalogs they can exhibit worldwide. More than 10 different colors of Dekton\nand Silestone, state-of-the-art surfaces, were used. &#8220;For us it is a pride\nto have been part of this project, as manufacturers of this product\ncategory.&#8221;<\/p>\n\n\n\n<p>Regarding the combination of factors that must be\nconsidered when choosing materials for a restaurant, Santiago Alfonso said,\n&#8220;The functional component is unquestionable. Physically and mechanically,\nquality is taken for granted, but it must provide a safety component, a plus of\nhygiene -antibacterial -, very little absorption and no porosity so that no\ntype of bacteria can be deposited. The aesthetic aspect, the color, the texture\nare extremely important elements&#8221;. Undoubtedly, the element of\nsustainability is gaining a lot of weight&#8221;. Therefore, he believes there must\nbe an ethical commitment to humanity and the planet. &#8220;Everything related\nto the circular economy is vital today.&#8221; In this line we must highlight\nSilestone HybriQ, a hybrid concept that citizens understand very well,\nincorporating recycled materials and a mixture of new minerals reducing silica\nload, to make a more ecofriendly and safe material will be of great value for\narchitecture and design professionals.<\/p>\n\n\n\n<p><strong>About Mercado Little Spain<\/strong><\/p>\n\n\n\n<p>Mercado Little Spain is the gastronomic space of Spanish cuisine created by Jos\u00e9 Andr\u00e9s, chef, entrepreneur, and social activist, together with chefs Ferr\u00e1n and Albert Adri\u00e0 in New York. The Capella Garc\u00eda Arquitectura studio, headed by Juli Capella, has been in charge of the interior design of the project. Cosentino has provided its know-how, experience and state-of-the-art surfaces such as Dekton and Silestone.
